Stir Fry

Stir Fry for 4

The following vegetables are cut up however you can best eat them. I cut them up small. It all fits in the pan better for me.

An onion
4 carrots
Cabbage to taste
Boc choy
1 stalk celery
Broccoli to taste

I put on brown rice to cook while I chop up the veggies. Then I put a little olive oil in the bottom. When the veggies are cut up, I put the onions in first followed by the carrots, celery and the stalks of the boc choy (leaving the greens for last.

While that is gently frying I cut up chicken tenders into chicken nuggets and put them aside.

I add the cabbage to the stir fry and when the cabbage is tender I take it all out and put it on a plate while I fry up the chicken in the same frying pan. When the chicken is done, I add a little water to the bottom of the pan and use the spatula to scrape up all the good pot liquor and add the veggies back into the mix, stirring them so the chicken juice gets all over them. This is when I add the boc choy greens and the broccoli leaving those on top and cover it. When the broccoli has turned kelly green, I serve it over the rice.
