I buy the already cut up, thin chicken breasts to make it easier.
Butternut squash
Asparagus
Brown Rice
Salad
Wash the squash and poke little holes in one side of it. Put it in the oven at 350 degrees on a piece of foil about an hour before you’re going to eat.
The, put on the brown rice. It also takes about an hour to cook.
Wash and cut the ends off the asparagus and put it aside.
Make the salad and put it in the fridge. I usually make a salad of Romaine lettuce, sweet onion and tomato with my own salad dressing
About 20 minutes before you want to serve supper, fry up the chicken breasts and put the asparagus in a pot with just a little water. When the chicken is done, take the squash from the oven and cut it down the middle. Scoop out the seeds first and toss them, then scoop out the squash and put it in a serving bowl. Turn the asparagus on high and steam it for about 3 minutes or until it turns bright green and then put it on a serving plate quickly so it doesn’t steam anymore and turn squishy., Then dish up the rice and put the salad on the table and you’re ready to eat.
